The gall bladder isn't as important as you think. The gall bladder just holds the bile which is made from the liver so that means you can get bile to the duodenum more effectively and when needed. People without a gallbladder have the disadvantage of having to not be able to eat large amounts of fatty foods like dairy, etc.
